Weekend Brunch | Vanilla Pound Cake

“When’re you girls making the pound cake for me? I just crave for it so much” said mom. 

Well, this is when you can’t reject your mom request when she specifically asks you to make it. Therefore, we want to take the chance to share with you the mom’s favorite pound cake. 

When coming to pound cakes, there are so many options you can come out with – citrus, floral or even honey 🍯. Therefore, today we will share with you the vanilla based pound cake and you could add whatever topping you like while making it based on what you prefer. In order to make the pound cake with more flavors  we decide to add in the extra orange peels we had for Homemade Orange Marmalade we made earlier on for the day.

We would do the vanilla based pound cake with the extra orange peels we had for marmalade.We enjoyed citrus as it provides you vitamins and helps in whitening skins. So why not give it a try!

As a comparison to the sponge cake – soft and fluffy, pound cake is dense and chewy but a good slice of pound cake is all moist inside. You might even taste the sweetness of the juice from the cake when you put in your mouth. What we enjoyed the most would be the small bite of the fruits peels in the cake, it just gives elevate the cake with more texture.

Ingredients |

  • 2 sticks butter, softened
  • 1 1/2  cup of caster sugar
  • 3 eggs
  • 2 cups of flour
  • 3/4 cup of milk
  • 2 tsp of vanilla
  • 1/4 cup orange zest
  • 2 tbsp of orange juice

Directions |

  1. Grease bread pan with butter and preheat oven to 300 degrees.
  2. In a mixing bowl, beat butter until light in color {about 3 minutes}. Gradually incorporate sugar and beat until fluffy.
  3. Add eggs one at a time and blend in on low.
  4. Alternate adding flour and milk, add vanilla until smooth.
  5. Add the orange zest and juice, fold in the mixture.
  6. Pour into bread pan and bake for 1 hour 20 minutes {use toothpick test to confirm}.
  7. Allow to cool and top with glaze.

For us, citrus pound cake is the best combination with Breakfast milk tea, so give it a try! However, instead of putting orange peels like what we did, this time, you can put in other dried fruits. Where you can easily get from the baking store or supermarket easily!
